By isolating oak’s essential attributes, Flavor Producers has created oak essences and extracts that can add layers of deep, rich flavor to a wide array of products. We can also create custom oak flavors for use in a broad range of applications.

American Oak Essence Isoz™:
Clear water white essence of American oak. Imparts smooth tannin-free notes of spice, smoke and vanilla.

  • Use Level: 0.2% – 0.5% in whiskey & other spirits, all beverages

American Oak Extract Isoz™:
Dark brown extract of American oak. Proprietary extraction technique delivers a slightly tannic mouth feel and body. Contributes spicy vanilla smoke notes.

  • Use Level: 0.05%-0.3% in whiskey & other spirits, all beverages

French Oak Essence Isoz™:
Clear water white essence of French oak. Imparts smooth tannin-free notes of spice, smoke and vanilla. A bit more nuanced and smoother than the American variety.

  • Use Level: 0.2% – 0.5% in whiskey & other spirits, all beverages

French Oak Extract Isoz™:
Dark brown extract of American oak. Proprietary extraction technique delivers a slightly tannic mouth feel as well as creamy vanilla, smoke, and clove notes.

  • Use Level: 0.05%-0.3% in whiskey & other spirits, all beverages

Oak (High Mocha) Extract and Essence Isoz™:
Selected oak and processing chosen to deliver subtle chocolate notes.

  • Use Level Essence: 0.2% – 0.5% in whiskey & other spirits, all beverages
  • Use Level Extract: 0.05% – 0.3% in whiskey & other spirits, all beverages

Oak (High Spice) Extract and Essence Isoz™:
Selected oak and processing chosen to deliver increased spice notes.

  • Available in essence and extract
  • Use Level Essence: 0.2% – 0.5% in whiskey & other spirits, all beverages
  • Use Level Extract: 0.05% – 0.3% in whiskey & other spirits, all beverages

Oak (High Vanilla) Extract and Essence Isoz™:
Selected oak and processing chosen to impart increased smooth vanilla qualities.

  • Available in essence and extract
  • Use Level Essence: 0.2% – 0.5% in whiskey & other spirits, all beverages
  • Use Level Extract: 0.05% – 0.3% in whiskey & other spirits, all beverages

Natural Flavor Blend (American Oak Type):
Stronger and more deliberate flavor delivery compared to Isoz™. Imparts more penetrating aromatic flavors of smoke, vanilla, sweet spice and wood.

  • Use Level: 0.1% – 0.2% in whiskey & other spirits, all beverages

Natural Flavor Blend (French Oak Type):
Stronger and more deliberate flavor delivery compared to Isoz™. Slightly increased toasted wood notes compared to the American Oak.

  • Use Level: 0.1% – 0.2% in whiskey & other spirits, all beverages

All of our oak flavors can be made to contain no “oak extract” and comply with TTB restrictions for use in any spirit. All of these oak products are TTB approved as ‘no action’ and all comply with global natural flavor regulations.
